Fluffy American Pancake Recipe

From Shrove Tuesday to Valentine’s Day (or even just a Sunday!), you can’t go wrong with a delicious stack of pancakes. But not all are made equal. If you’re after light, decadent pancakes that’ll be a real crowd-pleaser, then American-style ones should be your go-to.

What to Serve with American Pancakes
When it comes to toppings ideas for your pancakes, there are so many options to choose from, including:

  • Fruit such as berries, banana or stewed apples
  • A dusting of icing sugar
  • Maple syrup, honey or golden syrup
  • Ice cream, whipped cream or Greek yoghurt
  • Melted chocolate or chocolate chips

    How to make

    1. Start by using a sieve to sift the self-raising flour, baking powder, sugar and salt together in a large mixing bowl.
    2. In another bowl, whisk together the eggs and milk until fully combined. Next, add the cooled melted butter and vanilla extract (if using) and whisk for a final time.
    3. Make a well in the middle of your dry ingredients and slowly pour the wet mixture in, gently folding it together bit by bit with a light hand.
    4. Heat a large, non-stick frying pan or griddle on medium-low heat and add a small knob of butter to coat the pan.
    5. Add 2-3 tablespoons of batter to the pan and leave to cook for 2-3 minutes until bubbles start to form on the surface.
    6. Flip the pancake (using a spatula or the pan if you’re confident!) and cook for another 1-2 minutes until golden brown on both sides. Place in the oven on a low temperature to keep warm whilst you cook the rest.
    7. Repeat steps 4-6 until you’ve used up all of the batter and have a stack of fluffy American pancakes.
    8. Stack your pancakes on a plate and serve with your favourite toppings then tuck in and enjoy!
